I am sure there are 101 sambals in the Indo kitchen. I am equally sure that none of them have the heat pedis intensity

that my mother insisted on when making hers. It didn't matter what sambal sort she was making, it was hot HOT HOT!!

So just in case you're wondering, no not all sambals on this page are as firey as my mum's.

In the recipes I will explain how you can adjust them to your liking.
