Fried Rice

(Nasi Goreng)
750 g long grain rice
sunflower or vegetable oil
2 tbsp sesame oil
450 g bacon, diced into 1 cm cubes
1 onion, finely chopped
2 cloves garlic, finely chopped
1 red capsicum (bell pepper), seeds & membrane removed, finely chopped
2 tbsp sambal oelek
50 ml fish sauce
2 tblsp soy
pepper & salt to taste
7-8 spring onions, chopped into fine rings

Cook the rice according to the instructions on the packaging.

Heat a thin layer of oil in a wok. Add the sesame oil and bacon the stir fry until the bacon begins to colour.

Add the onion and garlic and continue to stir fry for a few minutes before adding the sambal oelek, fish sauce, soy, pepper and salt. Lastly add the capsicum and stir fry for a minute.

Add the cooked rice in 3x portions and mix well after each addition.

Lastly fold through the spring onion rings.
